A quick foodie post for you today just in time for Easter:
I decided to make something a bit different to the usual creme egg brownies that pop up this time of year, and take you back to being a child and helping to 'bake' these.
These are the easiest, quick make cakes - and you don't need to be a top chef either! If you have littles ones in your life, these are brilliant for getting together at Easter and making together.
Ingredients [makes 16]:
400g chocolate (I used milk chocolate)
mini eggs for decoration (or anything else you'd like on top)
Step 1: Break the chocolate up into pieces and melt. I did it in the microwave on 30 second bursts but you can do it over the pan too.
Step 2: Once the chocolate has melted, add the cornflakes and mix together. If you used the microwave to melt the chocolate then the cornflakes can go straight into the same bowl.
Step 3: Once the cornflakes are covered in chocolate, spread the mixture out evenly into cupcake cases.
Step 4: Add the mini eggs to the middle of the cornflakes to give the impression of a birds nest
Step 5: Allow to cool in the fridge before eating. Then enjoy!
There are some great variations to these, and the possibilities are endless. You can use any cereal you like, and any type of chocolate. My son actually said he wants to make white chocolate ones over his Coco Pops so we'll be making these agin next week.
