I made brownies for the first time ever - and what's more, they're gluten free:
Ingredients: (makes 12)
140g (5oz) gluten free plain white flour blend
190g (7oz) light soft brown sugar
130g (4 1/2oz) caster sugar
115g (4oz) unsalted butter
4 large eggs
1 1/2tsp vanilla extract
120g (4oz) dark chocolate (I used one from Kinnerton which is dairy, egg, gluten and nut free)
for the topping I used some Nutella as I didn't have any icing in/ran out of time as my 4 year old was getting hungry - you can use whatever topping you'd like though.
Pre heat the oven to 160˚C (320˚F)/Gas mark 3
melt the chocolate and butter together in a microwave safe bowl, in a microwave using 20 second bursts. It's good to stir after each burst.
Alternatively you could use the good old fashioned way of using a heat proof bowl over a pan of simmering water. Personally I think this takes longer, but either way gets the job done.
transfer the melted ingredients into a mixing bowl and add the sugars and vanilla extract. Mix the ingredients then add the eggs and beat until you have a shiny smooth mixture. Then add the flour and mix again until all the ingredients are incorporated.
Pour the mixture into a foil lined baking tray or pre greased baking tray and place in the oven for 25-30 minutes. To check the readiness, stab with a skewer or knife into the middle and if it comes out clean then it's done!
Let cool, then decorate to your will. I covered the top with Nutella and cut into rectangles (I made 12 brownies this way).
Considering this was my first time making brownies, I'm really pleased with the results. They turned out scrummy, and I've already eaten most of them. William agrees that they're yummy too which is always a good sign!
I made these gluten free as I'm trying to cut down on my gluten intake, but you can use normal plain flour if you wish
